Black Bean and Corn Quinoa Salad.


Here is a recipe my aunt suggested.
Here is the recipe:


Black Bean and corn Quinoa Salad

1 c quinoa
2 c vegetable broth
1/2 15oz can of black beans
1 c frozen sweet corn kernels, thawed
1/2 avocado, cut into 1/2 inch peices
1 c chopped tomatoes
1/2 c red onion, chopped small
Cilantro Dressing (Below)
zest of 1/2 lime
Salt and pepper
Chopped cilantro for garnish

Cook quinoa in vegetable broth according to package. Meanwhile combine black beans, corn, avocado, tomatoes and onion in a mixing bowl. Top with salad dressing (below). And add the lemon zest and the cilantro if you would like.

When quinoa is done you can either cool it for a cold salad or eat it hot. Both are tasty.

Cilantro Dressing

1/3 c olive oil
2 T chopped cilantro
2 T white wine vinegar
1/2 tsp salt
1/4 tsp cumin (i added a little more, i love cumin!)
squirt of agave nectar (if it tastes to vinager add more agave)
Place all ingredients in a container and shake until well mixed.


To make salad just place the black bean and corn mixture on top of quinoa and serve =]
