Nacho "Chicken" Casserole.


I came across this recipe a while back when we had first moved into our apartment and it looked like something Jake would LOVE so I made it. I put the Quorn fake chicken on my side and real chicken on his side. Its just one of those quick, easy, not very good for you, cheesy casseroles. But sometimes those are real nice(and fast)!! Casseroles never make for good pictures but whatever =] So here is the recipe I found it on allrecipes.com but changed a few things.


Nacho "Chicken" Casserole


  • 1 cup cubed cooked chicken or mock chicken
  • 1 cup cooked rice
  • 3/4 cup crushed nacho cheese-flavored tortilla chips
  • 1 can nacho cheese soup
  • 1/2 cup sliced fresh mushrooms
  • 1/4 cup sour cream
  • 3 tablespoons 2% milk
  • 2 tablespoon chopped green chilies
  • 1/2 teaspoon finely chopped jalapeno pepper (optional)
  • 1/4 cup shredded part-skim mozzarella cheese
  • 1/4 cup shredded Cheddar cheese



Directions

  1. In a bowl, combine the first eight ingredients. Combine the cheeses; stir half into the chicken mixture.
  2. Transfer to a 1-qt. baking dish coated with nonstick cooking spray. Sprinkle with remaining cheeses. Bake, uncovered, at 350 degrees F for 25-30 minutes or until cheese is bubbly.
